How to make it

  • On two large pieces of foil, divide potatoes, carrots, onion, celery, spices, salt and pepper. Drizzle with oil.
  • Fold foil over potatoes, wrap again in another sheet of foil (make as tight as possible as you don't want the oil to leak ).
  • Place on bbq at medium high heat, turning often for 45 minutes.
  • Remove from heat and let stand 5 minutes.
  • Transfer to a large bowl and sprinkle with fresh chopped parsley.
  • (My oldest likes a dab of sour cream on hers).

    When the kids were young, we added the carrots and celery so they would get more veg.....became a keeper.
