Sunshine Bread Recipe
A yeast bread that is flavored with basil, turmeric, caraway and cornmeal. Makes great sandwiches, and my daughter uses this bread dough as her pizza crust...it's great!

Ingredients
  • 2 envelopes yeast
  • 5 Tbsp. corn meal
  • big pinch tumeric
  • handful dried basil
  • 6 Tbsp. demerra sugar (sugar in the raw)
  • handful of caraway seeds
  • 9 c. flour
  • 4 c. warm water
  • 1/4 c. olive oil
  • 4 tsp. salt

Directions
  1. Dissolve yeast in 1 c. warm water + 1 tsp. sugar. Let stand till frothy.
  2. Combine dry ingredients less 2 c. flour.
  3. Add remaining 3 c. water, water with yeast and oil. Mix to form soft dough, adding remaining flour as necessary.
  4. Place in oiled bowl, turning over so top of dough is oiled.
  5. Cover and let rise in a warm place until doubled in bulk (1 hour or so).
  6. Form into two loaves of bread, or two loaves + 6 buns for smaller loaves.
  7. Cover and let rise till doubled, 45 minutes.
  8. Bake at 350 till golden, approx. 40 minutes.
