Buffalo Chicken Thighs

- 4 bone-in,skin-on chicken thighs shopping list
- coarse salt and pepper shopping list
- 1-1/4 tsp cayenne pepper shopping list
- 2TB mayonnaise shopping list
- 5 TB white-wine vinegar shopping list
- 3 oz blue cheese,crunbled(3/4 c shopping list
- 3 lg celery stalks,cut in 1/2" pieces shopping list
- 1 head romaine,cut in 1/2" pieces shopping list
- 2 TB unsalted butter shopping list
How to make it
- ! Pre-heat oven to 475. Place chicken,skin side up,on a rimmed baking sheet and season with salt,pepper and 1/2 tsp cayenne. Cook till skinis golden and crisp and chicken cooked thru,20 mins,rotating sheet 1/2 way thru. Meanwhile in large bowl,whisk together mayonnaise,2 TB vinegar and half the blue cheese. Add celery and romaine,seasonwith salt and pepper and toss to combine. Sprinkle salad with remaining blue cheese.
- In small pot,melt butter with 3/4 tsp cayenne over med-low . Whisk in 3 TB vinegar and remove from heat;season with salt and pepper. In med. bowl,toss chicken with butter mixture to coat. Divide chicken among 4 plates,drizzle with any extra butter mixture and serve with salad.
