- 6 tbsp butter or coconut oil, room temperature shopping list
- 1/4 cup brown sugar (optional) shopping list
- 1 egg shopping list
- 1/4 tsp salt shopping list
- 3 medium bananas, mashed shopping list
- 2 cups old-fashioned oats (gluten free if necessary) shopping list
- 1/2 cup raisins (chopped smaller if you will be feeding this to babies) shopping list
- 1/4 cup unsweetened shredded coconut shopping list
- 1/3 cup mini chocolate chips shopping list
- 1/3 cup dried cranberry shopping list
How to make it
- Preheat oven to 350F and grease an 8x8 baking pan.
- With an electric mixer, cream butter or coconut oil and sugar, if using. Add egg and beat until well mixed. Add mashed banana and salt and stir until incorporated. Stir in oatmeal, raisins, shredded coconut and chocolate chips and stir until combined.
- Spread batter in prepared pan and bake 30-40 minutes or until firm and light golden brown. Let cool in pan and cut into squares.
