Shrimp Fritters, Cadiz Style

- 1/2 an onion, minced shopping list
- 2 tablespoons parsley (or seaweed) shopping list
- 125g small, shelled shrimp or chopped, shelled prawns shopping list
- 1/4 kilogram flour shopping list
- 1/4 teaspoon baking powder shopping list
- 1/2 litre water shopping list
- 50ml white wine shopping list
- 1 teaspoon salt shopping list
- Dash of cayenne (optional) shopping list
- oil for frying shopping list
How to make it
- Mix the minced onion and parsley or seawood with the shrimp
- Add the flour and baking powder, then stir in the water and wine to make a heavy batter
- Season with salt and cayenne, if using.
- Cover, and let the batter sit for 3 hours in the refrigerator
- Heat oil, about 2 cms deep, in a frying pan
- Drop spoonfuls of the batter into the hot oil and fry until golden, turning half way through
- Drain on kitchen paper and serve hot
- Makes about 36
