How to make it

  • Mix the minced onion and parsley or seawood with the shrimp
  • Add the flour and baking powder, then stir in the water and wine to make a heavy batter
  • Season with salt and cayenne, if using.
  • Cover, and let the batter sit for 3 hours in the refrigerator
  • Heat oil, about 2 cms deep, in a frying pan
  • Drop spoonfuls of the batter into the hot oil and fry until golden, turning half way through
  • Drain on kitchen paper and serve hot
  • Makes about 36
