How to make it

  • Pour a little of the oil into an ovenproof casserole.
  • Arrange the potatoes, peppers and onions in layers.
  • Sprinkle the garlic, bay leaves and parsley on top
  • Sprinkle with paprika
  • Pour over the rest of the oil
  • Cook on the stovetop, on a medium heat, until the potatoes start to sizzle
  • Pour in the wine and water
  • Sprinkle the salt and pepper on top
  • When the liquid comes to the boil, cover and and bake in a medium oven for about 30 minutes, until the potatoes are tender.
  • Chopped bacon, spiced sausage, etc can be added to the layers.
