This is a great alternative to plain cornbread.

Ingredients
  • 1 1/2 cup corn meal; self-rising
  • 1/2 cup corn meal
  • 1 tablespoon sugar
  • 1 small jar cream corn
  • 1 small jar pimentoes
  • 2 each jalapeno peppers; chopped
  • 1 onion; chopped
  • 1 cup buttermilk
  • 1/2 cup veg. oil
  • 3 eggs

Directions
  1. Heat oven 450^F.
  2. Heat cast iron skillet in oven.
  3. Coat skillet well with shortening.
  4. Mix all ingredients and pour 1/2-inch thick in skillet.
  5. Bake until browned.
