How to make it

  • Heat the oil in a saucepan or stovetop casserole
  • Sautee the onion
  • Add the tomato, stock, saffron or paprika, sherry, rice ans peas
  • Bring to the boil
  • Cook on a high heat for 10 minutes
  • Lower the heat and add clams and shrimp
  • Taste and season with salt and pepper
  • Cook 5 minutes more
  • Serve with a sprinkling of chopped parsley and chopped eggs
