How to make it

  • Chop the vegetables finely.
  • Heat a frying pan with the olive oil. When hot add the vegetables and a pinch of salt and some black pepper.
  • When the vegetables are tender, add some cayenne and the oregano. Saute another minute or so and then move them around the outside of the pan.
  • Put the feta in the pan and let it cook for a couple of minutes. Turn it over and let it cook until it starts to soften.
  • Slice some ciabatta, pita or your favorite bread. Put some yogurt on the bread and then the cheese and vegetables.
