How to make it

  • Peel, boil and mash the potatoes with the butter and milk or cream and season well.
  • Fold in 1/2 cup cheese
  • Whilst the potatoes are boiling, sautee the onions until just tender
  • Add the leeks and fry until the onions and leeks are soft but not brown
  • Boil the cabbage until tender, drain and season with a little salt and plenty of pepper
  • Combine the cabbage, onions and leeks with the mashed potato in an ovenproof dish
  • Cover the top with the rest of the cheese
  • Bake in a medium oven until the top is golden and bubbling
