- 4 large potatoes shopping list
- I onion, finely chopped shopping list
- 1 leek, thinly sliced shopping list
- 1/2 a small cabbage, shredded shopping list
- 2 walnut sized knobs of butter shopping list
- 1 tablespoon milk or single cream shopping list
- 1 and 1/2 cups grated strong cheddar cheese shopping list
- salt and pepper shopping list
- A little oil for frying shopping list
How to make it
- Peel, boil and mash the potatoes with the butter and milk or cream and season well.
- Fold in 1/2 cup cheese
- Whilst the potatoes are boiling, sautee the onions until just tender
- Add the leeks and fry until the onions and leeks are soft but not brown
- Boil the cabbage until tender, drain and season with a little salt and plenty of pepper
- Combine the cabbage, onions and leeks with the mashed potato in an ovenproof dish
- Cover the top with the rest of the cheese
- Bake in a medium oven until the top is golden and bubbling
