How to make it

  • Place rice, chicken broth, carrots, celery and dried chopped onion in a large covered pot. Add salt and ground black pepper and bring to a rapid boil. Reduce heat and simmer until rice is fully cooked.
  • Remove from heat. Add chicken, mushrooms and french fried onions. Mix well and serve.
  • For extra flavor, add diced smoked sausage or crumbled, cooked bacon to the chicken broth/rice.
