How to make it

  • In large saucepan heat olive oil.
  • Add garlic, mushrooms, zucchini, eggplant, mushrooms, carrots, red pepper and sundried tomatoe paste. Sauce till tender.
  • Add seasonings and mix well.
  • Add meatballs and brown (about 5 minutes)
  • Add tomatoes, fire roasted tomatoes, sauce, broth, wine (At this time, I rinse out tomatoe cans with water and add to pan- not too much-about 1-1/2 to 2 cups water only) (If too thick-then add a little more)
  • Coven and simmer for 2-3 hours on low.
