How to make it

  • Cut tofu into 1 1/2" squares and drain on a towel. Top with another towel and a heavy weight and let stand for 15 minutes.
  • Combine the lime juice, soy sauce, ginger and sriracha sauce in a medium bowl. Add tofu, turning to coat with mixture. Cover and refrigerate and marinate for a minimum of 30 minutes and the longer the better.
  • Assemble the skewers by placing alternatively one square of tofu, one chunk of onion, one cherry tomato and a mint leaf.
  • Preheat BBQ to medium high and grill kebobs turning occasionally for 10 minutes. Brush with hoisin sauce and continue to grill until vegetables soften and tofu is well glazed, about 5 minutes more.
  • Enjoy.
