Tomato,onion And Tofu Kebobs

- 1 pkg. (16oz.) extra firm water-packed tofu, drained shopping list
- 1 tbsp. lime jice shopping list
- 2 tbsp. low sodium soy sauce shopping list
- 1 tsp. minced fresh ginger root shopping list
- 1 tsp. Sriracha sauce shopping list
- 16 fresh mint leaves shopping list
- 12 cherry tomatoes shopping list
- 1 onion, peeled, quartered and separated into layers shopping list
- 1/4 cup hoisin sauce shopping list
How to make it
- Cut tofu into 1 1/2" squares and drain on a towel. Top with another towel and a heavy weight and let stand for 15 minutes.
- Combine the lime juice, soy sauce, ginger and sriracha sauce in a medium bowl. Add tofu, turning to coat with mixture. Cover and refrigerate and marinate for a minimum of 30 minutes and the longer the better.
- Assemble the skewers by placing alternatively one square of tofu, one chunk of onion, one cherry tomato and a mint leaf.
- Preheat BBQ to medium high and grill kebobs turning occasionally for 10 minutes. Brush with hoisin sauce and continue to grill until vegetables soften and tofu is well glazed, about 5 minutes more.
