How to make it

  • Cook tortellini according to package directions.
  • Meanwhile, heat butter and sesame oil in small skillet and saute the mushrooms.
  • Drain pasta, rinse quickly with cold water and transfer to large bowl.
  • Stir in the onion (and pepper & tomato, if using), the mushrooms and the salad dressing and toss to coat well.
  • Add 1/2 the spinach and stir into pasta mixture to wilt slightly.
  • Put salad in the fridge and chill for 30 minutes.
  • After salad has chilled, add the toasted sesame seeds and the remaining spinach and toss to combine.
  • Taste and season as needed with salt & pepper and maybe a squeeze of lime juice.
