Tortellini Spinach And Sesame Salad

- 1 lb frozen cheese tortellini shopping list
- 1/3 cup slivered red onion shopping list
- 1 package button or bella mushrooms, thickly sliced shopping list
- 1 tspn butter shopping list
- 1 tspn sesame shopping list
- 1 tblspn toasted sesame seeds shopping list
- 1/4-1/3 cup Asian style salad dressing (I used Kraft Lite Asian toasted Sesame Dressing, but I've also heard that Newman's Own is great) shopping list
- 4 cups fresh spinach, washed, dried and torn into small pieces shopping list
- salt & pepper shopping list
- *Optional - squeeze of fresh lime juice shopping list
- *Optional (from the original - 1 bell pepper, sliced & 1 tomato, diced - I didn't have these, so I left them out.) shopping list
How to make it
- Cook tortellini according to package directions.
- Meanwhile, heat butter and sesame oil in small skillet and saute the mushrooms.
- Drain pasta, rinse quickly with cold water and transfer to large bowl.
- Stir in the onion (and pepper & tomato, if using), the mushrooms and the salad dressing and toss to coat well.
- Add 1/2 the spinach and stir into pasta mixture to wilt slightly.
- Put salad in the fridge and chill for 30 minutes.
- After salad has chilled, add the toasted sesame seeds and the remaining spinach and toss to combine.
- Taste and season as needed with salt & pepper and maybe a squeeze of lime juice.
