Hot Dog Green Relish

- 6 medium green tomatoes cored and finely chopped shopping list
- 1/2 pound cabbage cored and finely chopped shopping list
- 3 medium green sweet peppers seeded and finely chopped shopping list
- 2 medium red sweet peppers seeded and finely chopped shopping list
- 1 large white onion finely chopped shopping list
- 2 tablespoons pickling salt shopping list
- 1-1/4 cup sugar shopping list
- 2 teaspoons mustard seed shopping list
- 1 teaspoon celery seed shopping list
- 1/2 teaspoon ground turmeric shopping list
- 1-1/4 cup cider vinegar shopping list
How to make it
- Place vegetables in large bowl.
- Sprinkle with pickling salt then stir well and refrigerate overnight.
- Combine sugar, mustard seed, celery seed and turmeric in a large pot.
- Stir in vinegar and 1/2 cup water.
- Cook stirring until mixture comes to boiling and sugar dissolves.
- Rinse vegetables in colander under running water then drain and add to pot.
- Cook and stir until mixture boils then remove from heat.
- Ladle hot relish into hot sterilized canning jars leaving 1/2" head space.
- Wipe jar rims and adjust lids then process in boiling water canner for 10 minutes.
