How to make it

  • Place vegetables in large bowl.
  • Sprinkle with pickling salt then stir well and refrigerate overnight.
  • Combine sugar, mustard seed, celery seed and turmeric in a large pot.
  • Stir in vinegar and 1/2 cup water.
  • Cook stirring until mixture comes to boiling and sugar dissolves.
  • Rinse vegetables in colander under running water then drain and add to pot.
  • Cook and stir until mixture boils then remove from heat.
  • Ladle hot relish into hot sterilized canning jars leaving 1/2" head space.
  • Wipe jar rims and adjust lids then process in boiling water canner for 10 minutes.
