How to make it

  • Set up the breading station first. Put the flour on a small plate. Whisk the eggs together in a small bowl. Combine the cornmeal with 1 tsp salt and pepper, put it on another small plate.
  • Heat a frying pan with about 1 inch of olive oil over medium high heat. While it is heating assemble the tomatoes.
  • Salt and pepper the tomato slices. First dredge a slice in the flour. Press it down to coat well on both sides. Then dip is quickly in the egg and then in seasoned cornmeal. Press into the meal.
  • Cook until golden brown on each side. Drain on paper towels and keep warm in the oven while making the sauce.
  • Sauce
  • Remove all but about a tsp of the frying oil from the pan. Add the onion and garlic. Season with some salt and pepper. Saute until tender.
  • Add the sausage and saute until it becomes fragrant.
  • Add the cream sauce and let simmer a couple of minutes.
  • Serve on the tomatoes.
  • This is a really rich dish and very satifying.
