Fried Green Tomatoes With Paprika Kolbasz Cream Sauce

- 2 large green tomatoes, sliced about 1/2 in thick shopping list
- 3/4 cup flour shopping list
- 2 eggs shopping list
- 1 cup cornmeal shopping list
- salt and pepper shopping list
- olive oil for frying shopping list
- For the Sauce shopping list
- 1 onion, diced shopping list
- 1 clove garlic, minced shopping list
- 3 oz (80 grams) paprika kolbasz or chorizo shopping list
- 1 cup medium bechamel sauce shopping list
How to make it
- Set up the breading station first. Put the flour on a small plate. Whisk the eggs together in a small bowl. Combine the cornmeal with 1 tsp salt and pepper, put it on another small plate.
- Heat a frying pan with about 1 inch of olive oil over medium high heat. While it is heating assemble the tomatoes.
- Salt and pepper the tomato slices. First dredge a slice in the flour. Press it down to coat well on both sides. Then dip is quickly in the egg and then in seasoned cornmeal. Press into the meal.
- Cook until golden brown on each side. Drain on paper towels and keep warm in the oven while making the sauce.
- Sauce
- Remove all but about a tsp of the frying oil from the pan. Add the onion and garlic. Season with some salt and pepper. Saute until tender.
- Add the sausage and saute until it becomes fragrant.
- Add the cream sauce and let simmer a couple of minutes.
- Serve on the tomatoes.
- This is a really rich dish and very satifying.
