Cucumber Carrot Salad

With garden cukes, I wanted to try something different. My family really enjoyed this salad version. I used a mandolin but any food slicer that slices paper thin veges works well. Neither overly sweet or sour tasting, the dressing combination is pleasing- but adjust to your liking.
Ingredients
- 4 large cucumbers, washed and skin on shopping list
- 1 large sweet carrot, more if desired shopping list
- 1 small red onion shopping list
- Dressing: shopping list
- 1 cup mayonnaise shopping list
- 1 tsp Dijon mustard shopping list
- 1-2 Tbs malt vinegar shopping list
- 1 tsp dill weed shopping list
- 2 tsp sugar or Splenda shopping list
- sea salt to taste shopping list
How to make it
- Slice cucumber, red onion and carrots paper thin
- Place in a bowl
- Combine the mayo, mustard, dill weed, salt, sugar and stir to blend all.
- Blend well into veges.
- Mixture will produce liquid and that is just fine
- Adjust salt to taste if needed
- Serve at once or chill well; serving with slotted spoon, to remove vegetables from the liquid.
