Marshmallow Slice Recipe

	Mamanui / All my dishes 2 years, 4 months ago This is another of my Nana's old favourites. If you like marshmallow, you'll love this. My Nana used to sprinkle the marshmallow with coconut before it set, but I prefer it without. Prep:30m Cook:20m Servings:20	Mamanui

Ingredients

Base:

20g butter

1 tsp baking powder

1 1/2 cups flour

1 cup sugar

1 egg

Marshmallow Topping:

2 Dsp gelatine

1 cup boiling water

1 cup sugar

1 cup icing sugar

Flavouring Essence to taste (optional)

Directions

Base:

Cream butter and sugar.

Add egg then sifted dry ingredients.

Press into a greased "swiss roll" tin.

Bake at 180C for 20 minutes.

Marshmallow Topping:

Dissolve the gelatine in the boiling water.

Add other ingredients and beat until stiff.

Pour onto base and refrigerate until set.

A swiss roll tin is a shallow, long flat tin. Some call it a lamington tin. Some cookie sheets have sides on them so they would work well too.
