Marshmallow Slice Recipe
This is another of my Nana's old favourites. If you like marshmallow, you'll love this. My Nana used to sprinkle the marshmallow with coconut before it set, but I prefer it without.

Ingredients
  • Base:
  • 20g butter
  • 1 tsp baking powder
  • 1 1/2 cups flour
  • 1 cup sugar
  • 1 egg
  • Marshmallow Topping:
  • 2 Dsp gelatine
  • 1 cup boiling water
  • 1 cup sugar
  • 1 cup icing sugar
  • Flavouring Essence to taste (optional)

Directions
  1. Base:
  2. Cream butter and sugar.
  3. Add egg then sifted dry ingredients.
  4. Press into a greased "swiss roll" tin.
  5. Bake at 180C for 20 minutes.
  6. Marshmallow Topping:
  7. Dissolve the gelatine in the boiling water.
  8. Add other ingredients and beat until stiff.
  9. Pour onto base and refrigerate until set.

I hate to ask but what's a swiss roll tin? This recipe sounds really interesting. Thanks for the post.
