Pot Roast Meat Loaf

- 1 lb. ground beef shopping list
- 1/2 c. bread crumbs shopping list
- 1/2 tsp. garlic powder shopping list
- 1 tsp. dried basil shopping list
- 1/2 tsp. fresh ground black pepper shopping list
- 1 egg shopping list
- 1 tsp. worcestershire sauce shopping list
- ------------------------ shopping list
- 8 oz. tomato sauce (unseasoned) shopping list
- 2 tsp. chili powder shopping list
- 1 tsp. worcestershire sauce shopping list
- 2-3 small red or yukon gold potatoes, cut into 1 inch bites shopping list
- handful or two of baby carrots shopping list
- 1/2 medium yellow onion cut into wedges shopping list
- 1 tsp. salt shopping list
- 1/2 tsp. garlic powder shopping list
- 1/2 tsp. fresh ground black pepper shopping list
- 1/2 c. red cooking wine (I have tried real drinking wine with this, and it does not turn out the same, trust me.) shopping list
How to make it
- Preheat oven to 375 degrees F.
- Combine first 7 ingredients gently. Just enough to combine them.
- Place in the middle of a greased 13x9 in. baking dish.
- Sprinkle onions, potatoes and carrots around the meat.
- Mix tomato sauce, chili powder and second tsp. of Worcestershire sauce together in a small bowl. Pour mixture over meat, making sure to coat all of it.
- Sprinkle vegetables with salt, garlic powder and pepper, then drizzle the red cooking wine over them.
- Cover tightly with aluminum foil, remember to put the shiny side down towards the food.
- Bake at 375 for 1 hour, or until the vegetables are tender.
- Let meat rest about 5 min. before slicing and serving.
