Pork Lettuce Wraps

- 1 1/2 lbs. pork tenderloin shopping list
- 1 sm. sweet yellow onion, sliced shopping list
- 3 cloves garlic, minced shopping list
- 3 Tbs. red wine vinegar shopping list
- 2 Tbs. soy sauce shopping list
- 1 tsp. Dijon mustard shopping list
- salt and pepper shopping list
- 1 can original recipe stewed tomatoes, juice and all shopping list
- 8 large leaves green leaf lettuce shopping list
- 1/2 C. cashews, chopped shopping list
- 2 green onions, sliced thin shopping list
- ------------------------------------------------------ shopping list
- Sauce: shopping list
- 1/4 C. soy sauce shopping list
- 1 tsp. hot Chinese mustard shopping list
- 1/4 tsp. hot pepper sauce (I use Tiger sauce, for the name if nothing else) shopping list
- 2 tsp. cider vinegar shopping list
How to make it
- Place onions and garlic in the bottom of the slow cooker. Add the pork tenderloin and top with stewed tomatoes.
- Mix together red wine vinegar, soy sauce, Dijon mustard, salt and pepper and pour over everything in the slow cooker.
- Cook on High for 5-6 hours. (Note: You can cook it on low for 10-12 hours if you must, but the texture and flavor is better if cooked on high.)
- When pork is cooked, remove from cooker and shred.
- Place a portion of the shredded pork on a leaf of lettuce.
- Top with some of the stewed onions and tomatoes from the slow cooker.
- Top that with some crushed cashews and sliced green onions.
- Drizzle with a little of the soy sauce mixture.
