How to make it

  • Place onions and garlic in the bottom of the slow cooker. Add the pork tenderloin and top with stewed tomatoes.
  • Mix together red wine vinegar, soy sauce, Dijon mustard, salt and pepper and pour over everything in the slow cooker.
  • Cook on High for 5-6 hours. (Note: You can cook it on low for 10-12 hours if you must, but the texture and flavor is better if cooked on high.)
  • When pork is cooked, remove from cooker and shred.
  • Place a portion of the shredded pork on a leaf of lettuce.
  • Top with some of the stewed onions and tomatoes from the slow cooker.
  • Top that with some crushed cashews and sliced green onions.
  • Drizzle with a little of the soy sauce mixture.
