Easy Peasy Kidney Bean Salad

- 3 cups cooked and cooled red kidney beans(or 2 cans, drained and rinsed) shopping list
- about 1/4 cup red onion, diced shopping list
- juice from 1/2 lemon or 1 lime shopping list
- 1-2 stalks celery, chopped shopping list
- 2 hard boiled eggs, chopped shopping list
- 3-4T dill pickle relish shopping list
- 1/4ish cup of mayo(to taste) shopping list
- dash of hot sauce(or 2 or 3 or... yeah... to taste :) shopping list
- kosher or sea salt and fresh ground pepper shopping list
How to make it
- Soak onion in lemon or lime juice for at least 15 minutes. Drain and discard juice.
- Combine all ingredients and mix well.
- Refrigerate until ready to serve.

- **soaking raw onion in citrus juice helps tone down the harshness of the onion flavor, a bit. I LOVE onions, but unless they are vidalias, I don't like them raw much..... I now do this with any salad/condiment I make using them. :)
