Double-ginger Walnut Blondies

- 2 cups + 2 TBS all-purpose flour (I use 1/3 spelt flour) shopping list
- 2 tsp baking powder shopping list
- 1/2 tsp salt shopping list
- 1 heaping tsp ground ginger shopping list
- 2/3 cup softened butter shopping list
- 1 1/2 cups packed brown sugar shopping list
- 1 tsp vanilla extract shopping list
- 2 large eggs shopping list
- 1 cup coarsely chopped walnuts shopping list
- 1/2 cup diced candied ginger (I use Trader Joe's uncrystallized type, but crystallized will work too) shopping list
How to make it
- Preheat oven to 350°F, 175°C.
- Stir together all dry ingredients but sugar in a small bowl.
- In a large mixing bowl, beat butter and brown sugar until fluffy and well beaten.
- Beat in vanilla extract.
- Add eggs, one at a time, beating well after each egg.
- Remove 2 TBS of the flour mixture and combine with the cut ginger, coating each piece of ginger so it doesn't stick to its neighbor.
- Add the rest of the flour to the batter and stir well (I use a wooden spoon for this).
- Stir in walnuts and ginger with remaining flour mixture, until no traces of white remain.
- Spread evenly in a greased 9x12" pan and bake about 1/2 hour until browned and starting to pull away from the edges of the pan; do not overbake, as the blondies should be chewy in the middle.
- Cool completely before cutting into 16 squares.
