How to make it

  • Preheat oven to 350°F, 175°C.
  • Stir together all dry ingredients but sugar in a small bowl.
  • In a large mixing bowl, beat butter and brown sugar until fluffy and well beaten.
  • Beat in vanilla extract.
  • Add eggs, one at a time, beating well after each egg.
  • Remove 2 TBS of the flour mixture and combine with the cut ginger, coating each piece of ginger so it doesn't stick to its neighbor.
  • Add the rest of the flour to the batter and stir well (I use a wooden spoon for this).
  • Stir in walnuts and ginger with remaining flour mixture, until no traces of white remain.
  • Spread evenly in a greased 9x12" pan and bake about 1/2 hour until browned and starting to pull away from the edges of the pan; do not overbake, as the blondies should be chewy in the middle.
  • Cool completely before cutting into 16 squares.
