Salsa Burgers With Avocado Sauce

For Burgers
- 2lbs lean ground beef, at least chuck shopping list
- 1 small can rotel style tomatoes shopping list
- 1t ground cumin shopping list
- 1t ground coriander shopping list
- 1 smoked paprika shopping list
- 1-2T sour cream shopping list
- couple T sliced green olives(optional) shopping list
For avocado Sauce
- 1 ripe avocado, pitted and removed from skin shopping list
- juice from 1 lime shopping list
- 1/4 cup mayonnaise shopping list
- 2-3T sour cream shopping list
- several sprigs fresh cilantro shopping list
- kosher or sea salt and fresh ground pepper shopping list
For Serving
- Slices monterey jack or pepper jack cheese(I used a smoked pepperjack) shopping list
- Raw or sauteed red onion rings(I like to cook mine a bit) shopping list
- fresh sliced tomato shopping list
How to make it
For Burgers
- Combine all burger ingredients and mix well by hand. Don't over mix and don't mix too roughly, but combine ingredients well.
- Grill over high flame(or broil) for a couple minutes, each side, until desired doneness. I suggest no more than a medium rare for burgers, but that's up to you :)
For Avocado Sauce
- In blender or food processor, mix all ingredients until well blended and smooth. Chill until ready to use. You will probably have extra of this, but it's great as a dipping sauce, too!
- Serve burgers with the sauce and condiments of choice.
