How to make it

  • I line a large cookie sheet with foil
  • I set as many tomatoes on the sheet without touching(important) as I can
  • drizzle olive oil liberally over all the tomatoes
  • in small bowl combine garlic. basil, oregano, pepper, salt, cheese and bread crumbs.
  • Divide evenly over tomatoes
  • bake about 3 hours at 225
  • or until about half there size.
  • can be used in pasta, crostini, in pot roasts etc
  • can freeze for later use. (not that there are any leftovers).
  • The kids like these cut up and mixed with ravioli...and more cheese.
  • We like them with pasta and fresh basil, grated parmesean....and yes...maybe a glass of merlot!
