Oven Roasted Tomatoes

- As many ripe tomatoes cut in half, to fill a cookie sheet shopping list
- 4 cloves of garlic finely minced shopping list
- 2 tsp dried basil shopping list
- 1 tsp of dried oregano shopping list
- 1 tsp fresh ground black pepper shopping list
- 2 tsp of fresh ground sea salt shopping list
- 1/4 cup of fresh grated parmesean (fine) shopping list
- 1/4 cup bread crumbs shopping list
- olive oil shopping list
How to make it
- I line a large cookie sheet with foil
- I set as many tomatoes on the sheet without touching(important) as I can
- drizzle olive oil liberally over all the tomatoes
- in small bowl combine garlic. basil, oregano, pepper, salt, cheese and bread crumbs.
- Divide evenly over tomatoes
- bake about 3 hours at 225
- or until about half there size.
- can be used in pasta, crostini, in pot roasts etc
- can freeze for later use. (not that there are any leftovers).
- The kids like these cut up and mixed with ravioli...and more cheese.
- We like them with pasta and fresh basil, grated parmesean....and yes...maybe a glass of merlot!
