It's In There Zucchini Bread

- 3 medium eggs shopping list
- 1 cup vegetable oil shopping list
- 2 cups sugar shopping list
- 2 teaspoons vanilla shopping list
- 2 cups shredded zucchini, peel on and seeds scraped out shopping list
- 1 cups crushed pineapple, drained. I dont drain it dry. shopping list
- 3 cups flour shopping list
- 2 teaspoons baking soda shopping list
- 1 teaspoon salt shopping list
- 1/2 teaspoon baking powder shopping list
- 1 1/2 teaspoon cinnamon shopping list
- 3/4 teaspoon nutmeg, fresh grated is always best shopping list
- 1 cup raisins shopping list
- 1 cup walnuts shopping list
- or use coconut, craisins, chocolate chips. or some of each. shopping list
How to make it
- 350 degrees
- for 1 hour. It may take longer if you add alot of extra stuff. It will be very golden brown due to the sugar and juice from pineapple
- Grease and flour 9 x 5 loaf pans. Cool in pan for 10 minutes and remove to a wire rack.
- Beat eggs, oil sugar, vanilla. Stir in zucchini and pineapple. Combine dry add to egg mixture with raisins and nuts or what ever else you add. Stir to blend. Pour into pans and bake.
- Serve sliced with cream cheese or butter.
- You can make a sugar glaze if you wish. Very moist easy quick bread.
