Crock Pot Italian Chicken Stew

- 3-4 boneless skinless chicken breast halves, cut into 1-1 1/2-inch pieces shopping list
- 1 can cannellini beans, or chickpeas drained, rinsed shopping list
- 1 can light or dark kidney beans, drained, rinsed shopping list
- 1 can diced tomatoes, un-drained shopping list
- 1 cup chopped celery shopping list
- 1 cup onion chopped (I used white it's what I had) shopping list
- 1 cup (2 medium) sliced carrots shopping list
- 2 small garlic cloves, minced or chopped (I just keep a large jar of minced garlic in the fridge we go thru it fairly quickly) shopping list
- 1 cup water shopping list
- 1/2 cup white wine (or whatever you have available I'm not picky) shopping list
- 1 can (6oz) tomato paste shopping list
- 1 can un-drained green beans shopping list
- 1can drained black olives (optional) shopping list
- 3-4 tsp dried Italian seasoning shopping list
- 1 tsp salt (or to taste) shopping list
- 1 tsp pepper (or to taste) shopping list
How to make it
- In 4 to 6-quart slow cooker, combine all ingredients mix well.
- Cover; cook on low setting for 8 to 10 hours or on high setting for 5 to 6 hours or until vegetables are tender.
- Makes 4 (2-cup) servings
- Serve over Polenta
