Ginger Shrimp

- 250g frozen precooked shrimp, thawed shopping list
- 1 small onion sliced shopping list
- 1 small carrot shredded shopping list
- 1 potato cubed into small shopping list
- 1 small chilli or 1/2tsp chilli paste shopping list
- 2 garlic minced shopping list
- 1 Tbsp grated peeled fresh ginger shopping list
- 2 tsp soya sauce shopping list
- 2 tsp coconut milk powder (optional) shopping list
- 1 Tbsp honey shopping list
- 3tsp dark sesame oil shopping list
- 1/2tsp salt (optional) shopping list
- 1 1/2 tsp corn starch shopping list
- 1/2 cup water shopping list
- dash of pepper shopping list
- Serve with 1 1/2cup cooked white rice and arugula salad shopping list
How to make it
- 1. Sprinkle shrimp with ginger, salt and pepper, toss well. Set aside for 5min
- 2. Combine water, soy sauce, starch, honey, coconut milk and chilli paste in a bowl, stirring with a whisk.
- 3. Heat 1tsp sesame oil in skillet and stir fry shrimp for 2min. Remove from pan. Heat remaining oil and stir fry onion and garlic for 1min. Add carrot and potato and stir fry for 6min. Return shrimp mixture into pan. Add the liquid mixture and bring to boil. Cook for 1min or until it thickness.
- Serve immediately.
- *Vegetable mixture is optional. You can avoid, replace or add*
