Greek Tzatziki

- 1 medium cucumber, de-seeded and peeled shopping list
- 8 oz Greek yogurt shopping list
- 8 oz sour cream (optional, you can use more of the yogurt if you prefer) shopping list
- 2 tablespoons minced garlic shopping list
- 1 tablespoon extra virgin olive oil shopping list
- 1 tsp. minced fresh dill (optional) or 1 tsp minced fresh mint (optional) shopping list
How to make it
- Grate cucumber and squeeze out as much moisture as possible (use a kitchen towel)
- Mix all ingredients in medium bowl and allow to chill at least an hour, preferably overnight to let the flavors mingle.
- NOTE:
- You CAN use regular unflavored yogurt if it's all you have, but you will need to drain it in a mesh strainer for quite a while to remove the excess moisture.
- You can use a food processor if you like. I just hate to clean mine. *LOL*
- I really don't care for the mint, even with lamb but many people do.
- If I know that the entire batch will be used with fish, I'll sometimes use the dill, but honestly, I prefer the simple recipe.
