Ingredients

How to make it

  • Grate cucumber and squeeze out as much moisture as possible (use a kitchen towel)
  • Mix all ingredients in medium bowl and allow to chill at least an hour, preferably overnight to let the flavors mingle.
  • NOTE:
  • You CAN use regular unflavored yogurt if it's all you have, but you will need to drain it in a mesh strainer for quite a while to remove the excess moisture.
  • You can use a food processor if you like. I just hate to clean mine. *LOL*
  • I really don't care for the mint, even with lamb but many people do.
  • If I know that the entire batch will be used with fish, I'll sometimes use the dill, but honestly, I prefer the simple recipe.

I love it too and find myself using it in place of mayo and all kinds of things. And I'm all about not having to clean the evil food processor!

I like your way of thinking of not using the food processor to avoid having to clean it! That's my philosophy too. :) Nice post. I enjoy this as a spread on bagels for a quick lunch.
