How to make it

  • In a large, heavy bottomed pan over medium heat ( I used my cast iron dutch oven) combine the olive oil and butter
  • Once the butter is melted, add the veggies and garlic and saute for about 10 minutes
  • Add pancetta and cook for another 10 minutes
  • Turn heat up to high, med high
  • Add both the ground beef and ground veal in small amounts and brown as you add them. I do this to cook off any water..plus it's easier than browning 2 lbs of meat at once.
  • Fold the veggies into the meat and cook on high for 10 - 15 minutes, stirring often. You want the meat to caramelized, so expect it to kinda start sticking to the pan. Don't let it burn...lower the heat if necessary.
  • Add 1 cup of white wine, and with a wooden spoon scrape the tasty stuff off the bottom of the pan. The wine should cook out by the time you're done.
  • Add the tomatoes, stock and milk
  • Bring to a boil and then turn the heat down to low
  • Partially cover the pan and cook on low for 4 hours
  • Serve on top of your favorite pasta!
