How to make it

  • Peel eggplant and cut off the ends.
  • Slice the eggplant where it's not too thick, but not too thin
  • Whisk the egg in a medium sized bowl
  • Dredge the slices in flour shaking off excess
  • Heat enough oil in the skillet to cover the slices of eggplant, turning frequently so they don't burn.
  • Drain on paper towels
  • Open the jar of sauce and pour a small amount in the bottom of a large pyrex rectangular dish.
  • Place slices of eggplant over the sauce
  • Spoon some sauce over the eggplant and top with some mozzarella cheese and parmesan cheese.
  • Repeat and end with cheese.
  • Bake at 375 degrees F for approximately 30 minutes or until heated thru ;-)
