Delicious salad that can be served as a pita filling for lunches or as an appetizer.

Ingredients
  • Salad Ingredients
  • 1 1/2 cups dried green lentils
  • 1/2 cup currants
  • 1 sweet red pepper, diced
  • 2 green onions, chopped
  • plain yogourt as topping (optional)
  • Dressing
  • 1/4 cup vegetable oil
  • 1/4 cup red wine vinegar
  • 1 Tbsp lemon juice
  • 1 tsp currey powder
  • 1 tsp Dijon mustard
  • 1/2 tsp cumin
  • 1/4 tsp cinnamon
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • pinch of ground cloves

Directions
  1. Dressing: Whisk all ingredients together. Set aside
  2. Salad: Bring lentils and 3 cups of watter to a boil. Reduce heat and simmer covered for 20-25 minutes. Drain. Let cool
  3. Preparation: Toss lentils, currants, red peppers, green onions and dressing. Serve in pita pockets with plain yogourt or sour cream as a garnish.
