How to make it

  • Dressing: Whisk all ingredients together. Set aside
  • Salad: Bring lentils and 3 cups of watter to a boil. Reduce heat and simmer covered for 20-25 minutes. Drain. Let cool
  • Preparation: Toss lentils, currants, red peppers, green onions and dressing. Serve in pita pockets with plain yogourt or sour cream as a garnish.
