Spicy Football Groupies

- 6 fillets fresh Florida grouper(or frozen, but thawed :) shopping list
- olive oil shopping list
- about 1/4 cup cajun seasoning(this should be a blend of salt, peppers, paprika, garlic, onion, etc) shopping list
- 2 limes shopping list
- tomato slices shopping list
- red onion slices shopping list
- leaf lettuce shopping list
For Cajun Tartar Sauce
- 1 1/2 cups mayonnaise shopping list
- 1/3 cup dill pickle relish shopping list
- 1T cajun seasoning shopping list
- 1T Cajun or creole mustard shopping list
- 1/2 fresh lime shopping list
- several dashes of louisiana hot sauce shopping list
How to make it
For Tartar Sauce
- Combine all ingredients well.
- Cover and refrigerate until ready to serve.
For Groupies
- Drizzle small amount of olive oil over both sides of fillets.
- Drizzle with lime juice.
- Sprinkle liberally with the Cajun seasoning.
- Grill or broil over medium heat for about 4-5 minutes on each side, making sure you have seasoning on both sides. Cook just until flaking apart. Do not over cook.
- Add rolls to the grill, cut sides down, after you flip the fish,to get a light toasting on them, too.
- Serve on the buns with tartar sauce, tomato, onion and lettuce!
