Zucchini Spice Cake Recipe
A one bowl, easy to make spicy, delicious snack cake with hidden health benefits of whole wheat flour and zucchini. Great in lunches or with a glass of milk.

Ingredients
  • 2 cups whole wheat pastry flour
  • 2 cups grated zucchini (about three medium)
  • 1 1/4 cups sugar
  • 1/2 cup vegetable oil (I use sunflower)
  • 1/2 cup water
  • 1 1/4 tsp baking soda
  • 1 tsp salt
  • 1 1/4 tsp ground cinnamon
  • 1 1/4 tsp ground cloves
  • 1 1/4 tsp ground nutmeg
  • 1 tsp vanilla
  • 3 eggs

Directions
  1. Preheat oven to 350
  2. Grease 13 x 9 baking pan
  3. Combine all ingredients in a large bowl, either beat on low speed or combine with a wooden spoon
  4. Pour into pan
  5. Bake 45-50 minutes until wooden toothpick inserted in center comes out clean

I've never tried it with whole wheat flour, but I love zucchini cake - so moist! I will have to give this one a try!


I've been looking for more recipes using whole wheat flour ...and this one sounds soooo good! Thanks for sharing.
