How to make it

  • Grease muffins pans or use paper baking cups.
  • Cream the butter and sugar together.
  • Add eggs and beat until well mixed.
  • In another bowl, combine the wholewheat flour, salt, baking powder, cinnamon and nutmeg.
  • Mix well.
  • Add the dry ingredients, milk, apples, raisins and walnuts to the creamed mixture.
  • Beat until the ingredients are mixed.
  • Spoon batter into the muffin pans.
  • Fill about 3/4 full.
  • Bake at 425 degrees for about 15 minutes.
  • Serve warm.
  • Recipe makes one dozen muffins.

    I just made these. I really like them but I was told by my taste testers (my family) they were not sweet enough or semi-sweet. Is this proper form? Or are these muffins supposed to taste sweeter? Also, I used baking cups and much like @Jabec claims they were hind to get out of the pull out. Did anyone else have the same troubles?
    I think I'll try a little more sugar and greasing the muffin pans next time. Proportion wise it was spot on , it was enough for exactly 12 normal size muffins.

    I just made these and they are very doughy. I couldn't even get them out of the paper. I even tried cooking them more but it didn’t help. Did I use the wrong type of apples(Gala)? I can't bake to save my life so I am sure it was something I did but any advice would be appreciated.
