How to make it

  • Preheat oven to 350 degrees.
  • Barely cover prunes with some water and stew with the cinnamon stick, cloves and lemon peel. Drain and cool.
  • Sift together flour, soda, salt and all the spices.
  • Mix the sugar and the eggs until the sugar dissolves.
  • Add oil and vanilla.
  • Stir.
  • Pit prunes and cut in little pieces.
  • Add the buttermilk and the flour mixture to the eggs/sugar and oil, alternately..
  • Stir in prunes and pecans.
  • Pour into a greased and floured bundt cake or tube pan.
  • Bake for one hour.
  • remove from pan immediately and glaze while still warm with the bourbon glaze.
