Dried Fruit and Bourbon Cake

- 1 cup of prunes, cooked, cooled, pitted and mashed. (we stewed 'em in water with a cinnamon stick, a clove or two and a strip of lemon peel) shopping list
- 2 cups flour shopping list
- 1 tsp of baking soda shopping list
- 1/2 tsp of salt shopping list
- 1 tsp of ground cloves shopping list
- 1 tsp of allspice shopping list
- 1 tsp of nutmeg, please use fresh ground, it makes all the difference shopping list
- 1 tsp of cinnamon shopping list
- 1/2 teaspoon of ginger shopping list
- 2 cups of sugar shopping list
- 3 eggs shopping list
- 1 cup of vegetable oil shopping list
- 1 tsp of vanilla or shopping list
- 1/2 teaspoon of brandy extract shopping list
- 1/2 cup of buttermilk shopping list
- 1 cup chopped pecans shopping list
- Glaze: shopping list
- 1 cup of powdered sugar shopping list
- 2 tbsp of bourbon shopping list
- a little bit of lemon juice mixed with water to make the glaze thin enough to pour, no more than 2 tsp at best. shopping list
How to make it
- Preheat oven to 350 degrees.
- Barely cover prunes with some water and stew with the cinnamon stick, cloves and lemon peel. Drain and cool.
- Sift together flour, soda, salt and all the spices.
- Mix the sugar and the eggs until the sugar dissolves.
- Add oil and vanilla.
- Stir.
- Pit prunes and cut in little pieces.
- Add the buttermilk and the flour mixture to the eggs/sugar and oil, alternately..
- Stir in prunes and pecans.
- Pour into a greased and floured bundt cake or tube pan.
- Bake for one hour.
- remove from pan immediately and glaze while still warm with the bourbon glaze.
