How to make it

  • Heat bacon drippings in large skillet.
  • Julienne cut the onion, red and yellow peppers. Slice the mushrooms. Saute the vegetables for about 10 minutes or until softened.
  • Reduce heat a notch. Roughly chop the spinach and add to the saute pan with the chicken broth tossing loosely. When the spinach leaves are completely wilted you are done. Takes just a moment.
  • Serve immediately.
