How to make it

  • Combine the dry ingredients in a bowl
  • Combine the liquid ingredients
  • Before mixing both together in a batter, dip fish in some of the reserved dry mixture just to lightly coat each side
  • Place coated fish on a plate
  • Then make batter, by mixing both wet and dry mixtures well
  • Dip fish in batter to coat well,
  • Carefully drop pieces into hot deep oil, fry just a few pieces at a time not crowding fish when frying
  • Turn each side once until golden brown.
  • Place pieces on absorbent toweling paper to drain
  • Serve immediately
  • We love this with tarter sauce, lemon wedges and fresh home made coleslaw
  • Note: make sure your oil is hot enough ( 350F ) either using an electric deep fryer or a heavy duty pot to heat the oil when you do any frying.
