Red Velvet Chocolate Chip Cookies

- ¼ cup butter shopping list
- ¼ cup shortening shopping list
- ¼ cup sugar shopping list
- 2 tbsp red sanding sugar shopping list
- 1/3 cup brown sugar shopping list
- 1 egg white shopping list
- 1 tsp vanilla shopping list
- 1 oz Godiva chocolate liqueur shopping list
- ½ tsp rice vinegar shopping list
- ½ tbsp red food coloring shopping list
- 1 cup flour shopping list
- ½ cup spelt flour shopping list
- 1 tsp baking soda shopping list
- ¼ tsp salt shopping list
- 1/3 cup Dutch-process cocoa powder shopping list
- 1/3 cup miniature chocolate chips shopping list
glaze (Optional)
- 1/4 cup sifted icing sugar shopping list
- 1 tbsp buttermilk shopping list
How to make it
- Preheat oven to 375F and line a baking sheet with parchment.
- Cream butter, shortening and sugars together until fluffy.
- Add egg white, vanilla, liqueur, vinegar and food colouring and beat smooth. See Photo
- Stir in flours, baking soda, salt and cocoa until just combined. See Photo
- Fold in chocolate chips.
- Bake for 11-12 minutes. Cool completely on the sheets. See Photo
If glazing:
- Whisk together all ingredients until smooth and creamy.
- Drizzle over baked cookies and allow to set.
