How to make it

  • Follow your own recipe of a sponge cake( white or yellow cake)
  • While the cake is in the oven, prepare honey syrup by adding sugar, honey and water to a small pan and heat it in a low flame. Keep stirring till sugar dissolves. Heat the mixture till it becomes syrupy.
  • Add rose water and turn off the heat. Keep it aside to cool.
  • When the cake is done, pierce it all over with a toothpick and pour the cooled syrup all over the hot cake.
  • Put jam and 1-2 tsp sugar in a microwave bowl, mix it well and keep in microwave for 30 seconds. Take it out and mix well.
  • Spread it over the cake evenly.
  • Sprinkle with desiccated coconut and serve.

    I have used mixed fruit jam, you can use any berry jam, it goes wonderful with this cake :)
