How to make it

  • Preheat oven to 400 degrees Fahrenheit. If making homemade dough, prepare pizza dough according to directions (I use Wolfgang Puck's pizza dough recipe, always).
  • Combine all filling ingredients in large bowl. See Photo
  • On a lightly floured board, pinch off about 25 (1-inch) balls of dough and flatten slightly, filling the middle with desired amount of filling (be careful to keep a good ratio of filling to dough as you don’t want the bites to be too doughy). Wrap dough around filling and roll into a ball, placing in pachment lined, large round pizza pan See Photo. Repeat with remaining dough.
  • Combine garlic, parsley, and red chile flakes in olive oil and brush or drizzle over the pizza bites See Photo. Sprinkle with parmesan cheese. See Photo
  • Bake in oven for 15 to 20 minutes or until top is nicely browned (they smell AWESOME as they are baking!).
  • Notes:
  • You can substitute in any type of “toppings” you want instead of the above, like pepperoni/sausage. It might be a good idea if using vegetables like onions, green peppers or mushrooms to sauté them a little before using as the filling.

    This sounds great, I had a boyfriend that would make something similar, unfortunately I didn't get the recipe before I left him and then couldn't ask for it afterwards......... well you live, you learn.
