Wild Bourbon Berries

- 1 1/2 cups all-purpose flour shopping list
- 1 1/2 tablespoons sugar, some for sprinkling on top too shopping list
- 1/4 pound chilled butter, cubed shopping list
- 4 tablespoons butter, pats shopping list
- 5 tablespoons cold soda water shopping list
- 5-6 cups of berries (blueberries, raspberries, blackberries, gooseberries, etc.) shopping list
- 2 tablespoon bourbon shopping list
How to make it
- Put flour and 1 1/2 tablespoons sugar into a food processor.
- Add chilled butter.
- Process until mixture turns crumby.
- With the food processor running, slowly add the cold soda water.
- Mix until it forms a ball.
- Press down on dough mixture and make it a 4-ich circle.
- Wrap in plastic wrap and refrigerate for at least an hour.
- On floured surface, roll out the dough to fit a 9-inch round baking pan and allow for a 2-inch overhang.
- Pour berries into crust.
- Sprinkle about 1/2-3/4 cup sugar over fruit.
- Dot with butter.
- Drizzle bourbon over fruit. (I admit, I probably use more than 2 Tbls.)
- Fold the hanging edges of the crust toward the fruit, leaving the center open.
- Sprinkle with a little more sugar.
- Bake at 425 degrees for 45 minutes.
- Serve at room temperature with some vanilla ice cream on the side if desired.
