Does this look good? Yeah! / Nope
Ingredients
  • 1 1/2 cups all-purpose flour
  • 1 1/2 tablespoons sugar, some for sprinkling on top too
  • 1/4 pound chilled butter, cubed
  • 4 tablespoons butter, pats
  • 5 tablespoons cold soda water
  • 5-6 cups of berries (blueberries, raspberries, blackberries, gooseberries, etc.)
  • 2 tablespoon bourbon

Directions
  1. Put flour and 1 1/2 tablespoons sugar into a food processor.
  2. Add chilled butter.
  3. Process until mixture turns crumby.
  4. With the food processor running, slowly add the cold soda water.
  5. Mix until it forms a ball.
  6. Press down on dough mixture and make it a 4-ich circle.
  7. Wrap in plastic wrap and refrigerate for at least an hour.
  8. On floured surface, roll out the dough to fit a 9-inch round baking pan and allow for a 2-inch overhang.
  9. Pour berries into crust.
  10. Sprinkle about 1/2-3/4 cup sugar over fruit.
  11. Dot with butter.
  12. Drizzle bourbon over fruit. (I admit, I probably use more than 2 Tbls.)
  13. Fold the hanging edges of the crust toward the fruit, leaving the center open.
  14. Sprinkle with a little more sugar.
  15. Bake at 425 degrees for 45 minutes.
  16. Serve at room temperature with some vanilla ice cream on the side if desired.
