How to make it

  • Put flour and 1 1/2 tablespoons sugar into a food processor.
  • Add chilled butter.
  • Process until mixture turns crumby.
  • With the food processor running, slowly add the cold soda water.
  • Mix until it forms a ball.
  • Press down on dough mixture and make it a 4-ich circle.
  • Wrap in plastic wrap and refrigerate for at least an hour.
  • On floured surface, roll out the dough to fit a 9-inch round baking pan and allow for a 2-inch overhang.
  • Pour berries into crust.
  • Sprinkle about 1/2-3/4 cup sugar over fruit.
  • Dot with butter.
  • Drizzle bourbon over fruit. (I admit, I probably use more than 2 Tbls.)
  • Fold the hanging edges of the crust toward the fruit, leaving the center open.
  • Sprinkle with a little more sugar.
  • Bake at 425 degrees for 45 minutes.
  • Serve at room temperature with some vanilla ice cream on the side if desired.
