How to make it

  • Preheat the oven to 350 (F). Spray a baking dish with nonstick spray.
  • Slice the chicken breasts 3/4 through the center on the side, to create a pocket for stuffing and place them in the baking dish.
  • Mix the feta cheese, lemon juice, Italian seasoning, about a teaspoon of the Greek seasoning, a dash each of the garlic and onion powder, and a bit of olive oil (maybe a teaspoon) together in a small bowl.
  • Stuff equal amounts of the mixture inside the chicken breasts. (If the chicken breasts you are using are very small and you have stuffing mixture left over, sprinkle it over the top. I didn't have any left after stuffing.)
  • Season the tops of the chicken breasts with an additional sprinkling of Greek seasoning and garlic and drizzle with a bit of olive oil.
  • Bake for about 40 minutes or until chicken is cooked through (depending on the size of the chicken breasts and your oven, more or less time may be required).
  • Serve & enjoy!
