Ingredients

How to make it

  • Over medium heat add olive oil to large pot and heat
  • Add onion, garlic, carrots, thyme and bay leaf
  • Cook and stir for about 6 minutes, or until vegetables are tender
  • Add chicken stock and bring to boil
  • Fold in chicken, continue to simmer for another couple of minutes to heat through; season with salt and pepper
  • Remove bay leaf
  • Add noodles to bowl
  • Pour chicken soup over noodles and stir to combine
  • Sprinkle with chopped parsley

    I love the color of that broth. Plus I love the idea of not adding the noodles so they don't get mushy. One of those things that make you go D'oh! Why didn't I think of that?
