I found this recipe in a Amish cookbook. It is the only one of two pineapple upside down cakes I make. I have tried many

Ingredients
  • Melt and Place in 9x13 pan
  • 1 cup brown sugar
  • 1 ½ cups butter
  • When melted and mixed smooth add:
  • Can off pineapples either whole slices with cherries in between and nuts optional
  • Or I just use large can crushed pineapple. BE SURE YOU SAVE THE DRAINED JUICE.
  • 3 eggs, separated ( beat whites in separate bowl till stiff)
  • 1 cup sugar
  • 1 cup flour
  • 5 tablespoon pineapple juice
  • 1 teaspoon baking powder
  • Pinch salt
  • Mix and beat yolks add sugar, juice. Sift dry ingredients into this. Fold the beaten whites into the cake mix. Pour over the fruit and sugar mix.
  • Bake 375 for 30 minutes

  1. Invert sponge cake.

Really great.Now I wish I would seen it yesterday before I bake mine last night Coz I wasn't so happy with my topping it turned somehow brown.I will send you the pictures once I post it.


I am confused about this recipe:

You melt the 11/2 cups of butter with 1 cup of brown sugar!!! Right but further down in the recipe you mix the yolks, SUGAR (how much is not listed) with the juice.
