Sweet And Sour Red Cabbage And Pork

- 1 head red cabbage, thinly sliced (I supplemented with some savoy) shopping list
- 1 medium onion, chopped shopping list
- 1 T. butter shopping list
- 1 T. olive oil shopping list
- 1/3 cup apple cider vinegar shopping list
- 1/3 cup balsamic vinegar shopping list
- 1/4 cup brown sugar shopping list
- 3 T. water shopping list
- 1 t. salt, shopping list
- 1/4 t ground cloves shopping list
- 1/4 t. pepper ground shopping list
- 1/2 t. allspice shopping list
- 3/4 t. caraway seeds shopping list
- 1/2 t. celery seeds shopping list
- 1 apple (granny smith or macintosh or ?) I used macintosh chopped shopping list
- 2 pork chops trimmed, and cut into even pieces shopping list
How to make it
- In a big saucepan heat the butter and oil. Throw in the onions and the cabbage cook on medium/low heat, stirring frequently so all the veggies get a turn or 2, on the bottom Cover, and simmer for about an hour when the volume is reduced. Now add the rest of the ingredients (except the pork) and continue to simmer, stirring every half hour. Cook until the cabbage is "tender". (about 2 hours.
- Place the pork pieces on top of the cabbage, and replace lid. continue to simmer for 2 1/2 hours --until meat is very tender.
