Wild Rice And Artichoke Salad

- Dressing: shopping list
- 1 1/3 cup canola oil shopping list
- ½ cup white wine vinegar shopping list
- ¼ cup fresh grated parmesan shopping list
- 1 Tbs. sugar shopping list
- 1 tsp. salt shopping list
- 1 tsp. celery seed shopping list
- ½ tsp. white pepper shopping list
- ½ tsp dry mustard shopping list
- ¾ tsp paprika shopping list
- 1 clove garlic, minced shopping list
- Salad: shopping list
- ½ tsp salt shopping list
- 1 cup uncooked wild rice shopping list
- 6 oz. frozen English peas shopping list
- 6 oz. canned artichokes, halved shopping list
- 1/3 green bell pepper, chopped shopping list
- 3 green onions, sliced, white and green parts shopping list
- 1 cup cherry tomatoes, halved shopping list
- ¼ cup almonds or walnuts, slivered or crushed shopping list
How to make it
- Make dressing: Combine all ingredients, shake well and refrigerate.
- Make salad: cook rice, drain. Combine all ingredients except nuts and only add half of the dressing. Cover and refrigerate until chilled.
- When ready to serve, toss and add remaining dressing to taste. Sprinkle with nuts and serve.
