Banana Pecan Bread

Topping Ingredients:
- ¼ cup firmly packed brown sugar shopping list
- 2 tablespoons lightly salted butter shopping list
- ¼ cup chopped pecans shopping list
Bread Ingredients:
- 6 tablespoons lightly salted butter shopping list
- 2/3 cup granulated sugar shopping list
- 2 eggs shopping list
- 3 ripe medium peeled bananas shopping list
- 1 teaspoon vanilla extract shopping list
- 1 2/3 cup all purpose flour shopping list
- 2 teaspoons baking powder shopping list
- ½ teaspoon salt shopping list
- ½ cup chopped pecans shopping list
How to make it
- Set out 1 stick of butter to soften.
- Preheat oven to 350°F.
- Lightly spray 9 x 5 x 3 inch loaf pan with non-stick cooking spray.
- Combine topping ingredients; mix until it resembles coarse crumbs, and set aside.
- Mix butter, sugar, eggs, bananas, and vanilla; mix well.
- Mix flour, baking powder and salt together. Add to mixture; mix just until blended, but do not over-mix.
- Gently stir in pecans.
- Pour into prepared loaf pan.
- Sprinkle topping evenly over batter.
- Bake 50-60 minutes or until toothpick inserted in center comes out clean.
- NOTE: If you are using muffin tins, instead of a loaf pan, will make 12 muffins. cook for 25-30 minutes.
