How to make it

  • Set out 1 stick of butter to soften.
  • Preheat oven to 350°F.
  • Lightly spray 9 x 5 x 3 inch loaf pan with non-stick cooking spray.
  • Combine topping ingredients; mix until it resembles coarse crumbs, and set aside.
  • Mix butter, sugar, eggs, bananas, and vanilla; mix well.
  • Mix flour, baking powder and salt together. Add to mixture; mix just until blended, but do not over-mix.
  • Gently stir in pecans.
  • Pour into prepared loaf pan.
  • Sprinkle topping evenly over batter.
  • Bake 50-60 minutes or until toothpick inserted in center comes out clean.
  • NOTE: If you are using muffin tins, instead of a loaf pan, will make 12 muffins. cook for 25-30 minutes.
