Mom's Porkypine Meatballs!

- 1 & 1/2 lbs. 80-20 ground hamburger meat shopping list
- 2 T. finely diced white onion shopping list
- 2 eggs shopping list
- 2 small cans tomato sauce shopping list
- 2/3 cup uncooked white rice shopping list
- 1 t. salt shopping list
- 1/2 t. pepper shopping list
How to make it
- In a large mixing bowl, mix together uncooked hamburger meat, uncooked white rice, eggs, 1/2 can tomato sauce, diced onion, salt and pepper. Mix these ingredients into the meat thoroughly. Roll meat mixture into 2" diameter meatballs. Place in deep casserole dish and cover meatballs with the other can and a half of tomato sauce. Cover casserole dish and place in 325 degree oven for about 45 min. to 1 hour. Rice should be tender if it is not, return meatballs to oven until rice is done to your liking.
- Note: if meatballs are too dry add more tomato sauce and/or egg to hamburger. If too moist - add more hamburger meat. You want these meatballs to be fairly moist before cooking or the rice will not cook before the meatballs dry out!
