Almond Snickerdoodles Sandwich Cookies

- Cookie: shopping list
- 2 1/2 cups of blanched almond flour shopping list
- 1/4 teaspoon of salt shopping list
- 1/4 teaspoon of baking soda shopping list
- 8 tablespoons of light oil shopping list
- 1 tablespoon of vanilla shopping list
- 1 1/2 teaspoons of cinnamon shopping list
- 1/2 cup of honey shopping list
- Filling/Frosting: shopping list
- 1 cup of palm oil shortening shopping list
- 1 tablespoon of vanilla shopping list
- 3/4 cup of honey shopping list
- dash of salt shopping list
How to make it
- Preheat your oven to 350 degrees F.
- Combine the dry ingredients in a bowl and blend well.
- Add the wet ingredients and blend well again.
- Prepare baking sheets with parchment paper, and drop a spoon full of cookie dough on the parchment paper, spacing the cookies about 2 inches apart.
- Bake for about 15 minutes, or until they start to brown on the edges.
- Whip together the frosting/filling and when the cookies are cooled, pile some frosting between two cookies.
