Quinoa, Sundried Tomato And Roasted Pepper Salad

- 1 cup uncooked quinoa shopping list
- 3 or 4 cloves of garlic shopping list
- 1 tablespoon butter (optional) shopping list
- 3 tablespoons olive oil shopping list
- 2 cups chicken stock (or vegie stock for vegan) shopping list
- 1/3 cup chopped sun dried tomatoes shopping list
- 1/3 cup chopped roasted red and yellow peppers shopping list
- 1/3 cup feta cheese shopping list
- 1/3 cup chopped kalamata olives (I do not like olives, so I do not put these in) shopping list
How to make it
- Heat butter and oil in a skillet over medium heat
- Add garlic and quinoa and stir until quinoa is a dark tan color
- Stir in the chicken or vegie stock and bring to a boil
- Cover and simmer for about 12 minutes
- If there is still a lot of liquid, take lid off and let simmer until most of liquid is out
- Add tomatoes, peppers and feta (and optional olives) and stir until heated through.
- This is good warm or cold.
